Date syrup also called date honey or date molasses,it involves extracting and concentrating the natural sugars from dates. Here's a detailed introduce manufacturing process of date syrup,Manufacturing of date syrup as follows:
Date Impurity removal-lifting-sorting- first stage washing-second stage washing- date soaking or softing- seed and skin remover--refining-enzymolysis-multi-stage filtration-evaporating- sterilization- aseptic filling- date syrup.
1. Selection & Sorting of Dates
To select the good quality date: Ripe date, high-quality dates to ensure sweetness and flavor.
Cleaning: Dates are washed to remove dirt, debris, and foreign materials.
Pitting: Some processes remove pits, though some manufacturers keep them for flavor and filter later.
2. Soaking & Hydration
- Dates are soaked in warm water (50-60°C) for **1-2 hours** to soften them, making extraction easier.
- Some processors add pectinase enzymes to break down fiber and improve juice yield.
3. Extraction & Pulping
Mechanical :Some water may be added to adjust consistency. To remove the peel and skin of date,and remove the seeds. Then use the Industrial screw presses or decanters for remove the fiber.
4. Filtration & Clarification
Primary Filtration: using mesh screens or sieves to removes large solids and pit fragments.then use centrifugation or ultrafiltration for clearer syrup.
- Enzymatic Treatment : Transform large particles into small particles,Improve filtration efficiency.
6. Concentration & Evaporation**
The extracted date juice is concentrated by heating at 60°C-70°C** under vacuum evaporation to preserve nutrients and prevent caramelization.
Brix Level: The syrup is concentrated to 70°C-80° Brix** (sugar content) for desired thickness.
7. Sterilization
- The syrup is heated to 8°5-90°C to kill microbes and extend shelf life.
8. Packaging & Storage
Hot Filling:Date Syrup is packed in sterilized glass or PET bottles while still warm.
Normal filling: Filling and capping, post-pasteurization,labeling.
Aseptic filling,to fill in 2-20kg aseptic bag or fill date syrup in 220L aseptic bag in drum.
9. Quality Control
Testing:pH (3.5-5.5), moisture content, microbial safety, and sugar concentration are checked.

- Alternative to honey, maple syrup, or molasses.
