2.1. Fruit processing project description

Dried tomatos, tomato chips, preserved tomatos, tomato haw sheets/ sweetend roll film/ haw roll, tomato freeze-dried tablets, tomato powder, tomato instant spray-dried powder, tomato instant vacuum freeze-dried powder, etc. Special products include peeled whole tomatoes, lycopene, etc.

The best-selling tomato paste products in the international market are as follows. Tomato paste is a product made by pretreating tomato, pulping, removing skin and seeds, without any additives, and concentrating. The dry matter content of tomato paste(Brix) is generally 22 ~ 24% and 28 ~ 30%, and the latter product is in great demand in the international market. If the tomato paste with dry matter content of 28 ~ 30% is produced with the dry matter content of 5% and the yield of 89%, it takes 6.5 ~ 10 tons of tomatoes to process 1 ton of tomato paste. The technological process of tomato sauce is as follows: tomato raw materials → water trough delivery → lifting → cleaning → selection → pumping → crushing → temporary storage → preheating → pumping → refining (peeling, seed and residue) → temporary storage → pumping → concentration → temporary storage → homogenization → sterilization → cooling → aseptic packaging → tomato sauce (28 ~ 30%).

1). Cleaning and sorting tomatoes are generally stored in an open-air reinforced concrete rectangular pool with a flow ditch by wet method, and the storage period is no more than 24 hours. The tomato enters the production workshop by hydraulic transportation through the flow ditch. The hydraulic transportation can remove the grass, leaves and other sundries mixed into the tomato raw materials, and can also wash away the soil, sand, microorganisms and pesticides attached to the tomato surface, and then enter the cleaning machine for intensive cleaning. Tomato for sauce production is an intact and mature fruit, and rotten, rotten, diseased and insect-infested tomatoes should be eliminated.

2). The purpose of crushing tomatoes is to beat them better and improve the pulp yield. Tomato crushing is divided into hot crushing process and cold crushing process, and the crushing method adopted has a certain relationship with the quality of raw materials and the quality requirements of products.
